Who ships turkey, and when do they book?

US farmers raise about 250 million turkeys a year, roughly 5.6 billion pounds dressed. Three companies control most of the supply. The product is frozen and warehoused through the autumn for a single demand week, so the freight is a long steady build followed by a violent distribution push.

Four processors at head offices and home plants. Butterball alone runs processing in Arkansas, Missouri and North Carolina.

Ask for the plant's logistics manager and the cold storage scheduler. The cold storage leg is the one most brokers never think about: product is frozen months ahead and sits in third-party freezers until the retail pull. Those transfers are real truckload volume in the quiet months and nobody is competing for them.

Where it hauls

Production concentrates where the grain is and where the growers are. Minnesota and Wisconsin carry the upper midwest complex, North Carolina, Arkansas and Missouri the southern one, with Virginia and the Central Valley of California adding capacity. Freight runs plant to cold storage, cold storage to retail distribution centre, and then distribution centre to store in the final fortnight. The processors to know:

To the processors, August into September

Asking for the boring freight first is the move. Everybody calls in November. The carrier who ran the September freezer transfers is the one they call in November.

Qualifying questions

  • Frozen or fresh? Frozen whole birds run around zero degrees and tolerate a long transit. Fresh product runs just above freezing with days of shelf life and a hard delivery date. Completely different risk, so establish which.
  • Is this a cold storage transfer or a retail delivery? Plant to freezer is steady and plannable. Freezer to retail distribution centre in November is date-critical with no forgiveness. Ask which leg, because the second one is a different service level.
  • What is the setpoint and do they want a download? Frozen protein claims turn on the temperature record. Confirm the setpoint, whether continuous monitoring is expected, and who reads the download on arrival.
  • What does it scale? Frozen whole birds in cases palletize densely and load heavy. Get the case count and target gross rather than assuming a protein load will cube out.
  • Is the trailer certified for food? Protein shippers apply strict sanitation and prior-load rules. Have your washout documentation and prior-load history ready before it is requested.

When to call

August and September, as the freeze-and-store build begins. October and November are the distribution push and by then capacity is locked. There is also a second, smaller Christmas pull, and a year-round deli and ground turkey business that most people forget exists behind the whole-bird story.
