Four producers at head offices and home plants. Each runs multiple sites, and Wisconsin alone holds dozens of independent cheesemakers beyond these.
Ask for the plant's logistics manager. There are three separate freight businesses at a cheese plant: inbound raw milk in tankers, outbound bulk blocks and barrels to processors, and outbound packaged retail cheese to distribution centres. The third is the classic refrigerated truckload; the second is steadier and less contested.
Where it hauls
Two states carry it. Wisconsin is the traditional centre, with Plymouth, Green Bay and the eastern dairy counties holding an extraordinary density of plants. California is the volume producer, with the Central Valley around Hilmar, Tulare and Visalia processing enormous milk volumes into commodity cheese and whey. Idaho and New Mexico have grown fast. To the plants, January into FebruaryThe bulk block and barrel lane is the detail worth raising. It is unglamorous, high volume and moves constantly between plants and processors, and far fewer brokers ask about it than about the retail freight.
Qualifying questions
- What is the setpoint? Packaged cheese runs refrigerated, typically 34 to 40 degrees depending on product. It must not freeze, which ruins texture. Confirm the setpoint and whether they want a temperature download on arrival.
- Retail packaged, or bulk blocks and barrels? Retail cases palletize and go to distribution centres. Bulk 40-pound blocks and 500-pound barrels go to further processors and load completely differently. Two separate businesses, so ask which.
- What does it scale? Cheese is dense and loads run heavy, particularly bulk. Get the pallet count and target gross rather than assuming refrigerated food freight will cube out.
- Is the trailer food-grade and odour-free? Cheese absorbs odours readily and receivers reject on it. Prior-load history matters more here than on most refrigerated freight. Have the answer ready.
- Is there inbound milk work too? Raw milk arrives daily in tankers and is a separate freight business with separate equipment. If you have or can source tank capacity, it is worth asking about.
When to call
January and February, when annual arrangements get set. Cheese has no harvest, so there is no window to miss; what there is instead is a steady weekly requirement and a lift into the autumn and holiday baking season. That makes it a lane to hold rather than a season to catch.
